Sunday

 Hi Everyone!

It's been a veggie week for meals. Really, how can you go wrong with that?
Veggie soup. Everything is from my garden, except the celery.
 
Add some water with herbs and seasoning.
That is fresh oregano from the garden.

 
 Hmmmm so good. You're thinking, soup in the summer? ha ha ha no summer here. It was in the 50s the day I made this. That was last week. 
  
  
Mr. M. wanted poblano casserole. It is his favorite. However, I make the filling different every time. This one has potatoes, corn, roasted and cut up poblanos, a bit of my canned ground beef. Mr. M. loved that. Any Mexican seasoning I have on hand.
Layer a baking dish with corn tortillas and the filling. Also grated cheese.
Oh darn. I didn't take photos of the finished product. I top it with tortillas, and a mixture of grated cheese an egg and a bit of water and pour it over the top. Bake until all the cheese is melted. 
Here is a photo of one I made a while back. That cheese is so good on top.
 
Tonight I made roasted veggies. Almost everything from my garden. Not the peppers or the cauliflower. 

 
Here are the beets I put in. These are amazing and sooo sweet. They are called Ruby Reds.
 
I'm growing Lemon Thyme for the first time. I didn't know it was so pretty and tiny.

Also the onions are doing great. I have about 15 curing right now.
 Bigger than my hand.
 
I brought this into the house yesterday. I like that I can just bring in what I need.
Everything went into the roasted veggie dinner except the cucumbers. I'm making a smashed cucumber salad. I learned about this on Melody Jacob's blog.

How healthy!
Once upon a time (and not so long ago when my parents were children) people were self-sufficient, meaning they grew their own food and traded what they didn't have with their neighbors.
I grow tomatoes, peppers, eggplants and cucumbers with my mom. My favorite is the peppers, they are so delicious!!

I am not sure I have a favorite veggie, but I buy more zucchini and broccoli so probably those two. No, I don’t grow anything well except weeds.

You live in a great gardening area. Wow, what a basketful of beauties. Except for green beans, lettuce and kale everything in mine is still in the growing stage, but your photos make me excited for picking. It must be those cooler temperatures that the veggies all love. I like soups all year round...but I'd pass on the beets--lol! Everything else looks soooo yummy!
I've never seen lemon thyme. Pretty!
Favorite veggie...broccoli...or maybe it should be potatoes. :)

Good grief, I can't believe I haven't been by sooner than this! Anywho, your soup looks yummy. I've not had poblano casserole but it looks good. I love Mexican style foods! Your veggies are amazing!! You can't beat that kind of goodness from garden to table. I sure do miss my in-laws' garden. I miss them more, but you know what I mean. They use to grow all kinds of good stuff. The tomatoes were the best! I like all veggies pretty darn well, so it's hard to pick a favorite. Happy gardening or harvesting, Nicole!
