Sunday

 Hi Everyone!

It's been a veggie week for meals. Really, how can you go wrong with that?
Veggie soup. Everything is from my garden, except the celery.
 
Add some water with herbs and seasoning.
That is fresh oregano from the garden.

 
 Hmmmm so good. You're thinking, soup in the summer? ha ha ha no summer here. It was in the 50s the day I made this. That was last week. 
  
  
Mr. M. wanted poblano casserole. It is his favorite. However, I make the filling different every time. This one has potatoes, corn, roasted and cut up poblanos, a bit of my canned ground beef. Mr. M. loved that. Any Mexican seasoning I have on hand.
Layer a baking dish with corn tortillas and the filling. Also grated cheese.
Oh darn. I didn't take photos of the finished product. I top it with tortillas, and a mixture of grated cheese an egg and a bit of water and pour it over the top. Bake until all the cheese is melted. 
Here is a photo of one I made a while back. That cheese is so good on top.
 
Tonight I made roasted veggies. Almost everything from my garden. Not the peppers or the cauliflower. 

 
Here are the beets I put in. These are amazing and sooo sweet. They are called Ruby Reds.
 
I'm growing Lemon Thyme for the first time. I didn't know it was so pretty and tiny.

Also the onions are doing great. I have about 15 curing right now.
 Bigger than my hand.
 
I brought this into the house yesterday. I like that I can just bring in what I need.
Everything went into the roasted veggie dinner except the cucumbers. I'm making a smashed cucumber salad. I learned about this on Melody Jacob's blog.

T stands for sunny day.

 Hi Everyone!

We sure have been having sunny days. The Garden is loving it... well I am too. It never gets too hot here and the wind off the pacific keeps it that way. 
I'm still not doing well and the pain in my stomach has returned. I can't get into the specialist until August 1. They have me on the cancellation list so we will see how it all works out. Keep sending healing energy to me. Thank you.
Today I am joining Bleubeard and Elizabeth at the T-Party. My drink is this amazing, thick, fruit smoothie. I wish I could tell you how good and refreshing it is. 

 


 The extra went into an ice tray for the next time.



 
  I can't believe I didn't take photos for this meal but I didn't. Way back when I use to really like hamburger helper. I know ick right?
However, I was looking for some recipes for ground meat and came across a ton of homemade H.H. recipes. I am not kidding you this is SOOOO GOOOOD and a bit healthier than what comes out of the box. LOL
Just google homemade H.H.
 
I really love beets and potatoes. Even better when they come from my garden.
I cleaned, cut and boil the beets until they are not quite done. I remove and added them to a pan with ghee, salt and pepper. Along with the almost cooked potatoes. 
Add some chicken breast bits and you have a great meal.
Seriously delicious.

With the sunshine my flowers are really coming in full bloom. I am so happy to see them.
