Friday post to asnwer canning questions.

 Hi Everyone!

Today I am doing a different kind of post. I have been asked several times, from FB friends and yesterday from Cathy, from Curious as a Cathy, about why I can certain foods. The first reason is "redundancy". The second is convenience and the third is survival.
Cathy asked me why can meat if it is wrapped properly and in the freezer? If the grid goes down for any length of time, we could lose the   foods we have in the freezer. Canning meat and meat dinners allows us to keep the freezer and fridge doors closed to keep the cold in as long as possible. Did you know that approximately up to one-third of cold air inside of a refrigerator escapes every time the door is opened?
 

I was asked on FB why can beans, don't they last forever in the bag? They don't last forever but the same idea. If the grid goes down do you really want to try and cook a batch of beans on a camp stove? Better to have the beans ready to eat or just heat up, right? 
Convenience. How many times do you come home and just don't want to cook? Grab a canned meal and heat it up. 
Survival. Again, if the grid goes down you want food that has been canned, dehydrated, freeze dried and ready to eat.

Our power has gone off 7 or 8 times in the past 12 months. One week it was off 3 times. No kidding. We have 3 big buckets of water ready right now because of the storm and super cold weather-we are thinking the power will go off again. Yes-canning is smart all the way around and it tastes great too. Hope your weekend is wonderful.
