T Stands for No sunshine

Greetings!

Today is T for no sunshine for 5 days. Just gray, overcast, marine layer, fog, rain and wind. NOT good for a garden.
So I cooked and baked that last few days. A pot of 15 beans but then I add extra so I guess you can say it was a pot of 20 bean soup. I forgot to take a photo. You will have to imagine the glory of it. Corn bread too.
The next day I got up early and made some meaty spaghetti sauce. Ground beef, pork and beef unrendered Chorizo, and Italian sweet sausage. Home canned tomatoes and tomato sauce. When it was done I sliced an eggplant. I dipped it in an egg wash, flour and bread crumbs. Then fried it in butter and garlic just until golden. Then into a backing dish and layered with the sauce and a mixture of mozzarell and parmesan cheeses. Baked at 400 for 40 minutes. OMG!!!! The best.
I made beer batter french bread too.

I can't tell you how good this is. Even Mr. M. liked it.

Yes those are my little feet. I am short and need to stand on a step stool to take photos.

The bread has just the right about of crunch outside and soft and chewy inside.

Later in the evening Mr. M. got home made yellow cake with chocolate frosting and a cuppa coffee.

I showed this the other day. I mentioned I see animals.

It now looks like this. I never said real animals. LOL

I also did this drawing of my son for his birthday. He will be 52 in a few days.

  2. We need rain so you could send some our way. Your garden needs sun and mine needs rain. But I must say you've created some delicious looking food. That's the highlights of not being able to garden. It all looks good, and since my dinner was small today, I'll take a plate of each just like your photos. Have a super T day Nicole. Hugs-Erika

  6. The food looks delicious and is making my mouth water Nicole!
I love your art with those arty animals, and that's a wonderful portrait of your son. I'm in the last year of my 50s, next year is a big birthday.
Hope you're having a good week,
    Keep safe and well,
    Alison xx

  7. I like the idea of egg plant in breadcrumbs to make a type of lasagne, it looks delicious, so does the bread, you can’t beat the smell of freshly baked bread!
Your drawing of your son is lovely, I’m sure he will love it.
    Happy T Day

  8. Hi from grey and rainy since like forever... Italian sweet sausage? Never heard of that. Sweet sausage?
Beer batter french bread? Sounds YUM!! (recipe, please?)
Your little feet made me laugh. Join my little head! Or ears, for that matter...
    Honest? I cannot decide.
I just can´t and I "studied" before and after.
Buuut. I lied. I think I like your first "unfinished" art better. Don´t be mad at me... The bunny is cute but... I still prefer the first.

    Great portrait of your son!
Oh, "Corinna" / Covid... will we ever get this under control?
People behave like little kids here.

Your portraits are getting better. I see a big difference from a few months ago.
Hope you get some warm sunshine soon.

  11. HOW can you have a 52 year old son? It seems impossible.

  12. We've had sun, but rain is predicted for tonight and clouds are coming in. I make 15-bean soup, so I can picture it along with the cornbread. I tend to forget bean soups as the weather warms. All of your food looks delicious!

  13. Your meal looks absolutely delicious, and there is just nothing like home baked bread.
We've had no rain in too long so we could use it right now- everything is so dry.
Wonderful drawing of your son- happy birthday to him. And a happy T day to you!

  15. No rain here, just windy and overcast every day. I love that you made eggplant parmigiana or parmesan. I made it often when I grew eggplant. And your bread looks yummy, too. Of course, the coffee and cake Mr. M. made is wonderful. I am short too, and have to stand on a stool to photograph my art.

Your drawing of your son is fabulous. What a great drawing for his birthday. Thanks for sharing your baking, lovely drawing, and coffee with us for T this Tuesday, dear Nicole.

  19. I'm sorry to hear you've had such dreary weather. Here we have had a heatwave for the past week. (Not that this is going to make you feel any better, sorry)
Wow, that bead look really delicious! And the eggplant parmesan sounds yummy. I've never made it as neither of us is keen on eggplant really.
The portrait of your son is amazing. I hope he was pleased with it. Our children are in their forties and it makes me feel very old. My mum (97 in a few weeks time) says: 'Wait until your son is 70, then you feel old'.
    Happy T-Day,
    Hugs,
    Lisca

Love the animals that you saw!!! I wish some folk would take this virus more seriously than they do - they are behaving as though it's gone away! Very belated Happy T Day wishes, Chrisxx
