T Stands for a few sunny days

 Greetings!

Today is T-day over at Elizabeth and Bleubeard's be sure to stop by to see what the T-Gang is doing.
For me, I have 2 more days of sunshine and then we go into storm mode here on the Oregon coast. We take our sunshine very seriously and get as much done outdoors as possible. when it's here. LOL
I worked in the yard yesterday getting more seeds started in the greenhouse. Today I will get the potatoes planted and the outside garden area ready for the containers. I never thought I would be a gardener but I am seriously hooked.

Here is another photo of a 29 Faces entry.

For my T-day entry I made almond cookies and hot water. Soooo good. Soft and crispy at the same time.
You will need;
1 cup of butter, 2cups granulated sugar, 2 large eggs, 1t almond extract, 3 cups all purpose flour, 1/2t backing soda, 1/2t cream of tarter and slices or crumbled almonds.
(Note; I use half all purpose flour and half almond flour)

Combine the butter and sugar until creamy. Add eggs and almond extract. Mix until well beaten. In separate bowl combine flour, backing soda and cream of tarter. Add this mixture a little at a time to the wet ingredients. Scoop dough onto parchment covered cookie sheets leaving a good 2" apart. Add the almonds to the top.
Bake at 350°F for 11 to 14 minutes depending on your oven. Keep an eye on them.

Let me know if you  make these cookies.

Have a great day

  7. What a beautiful smiling expression of the woman in the photo!
I think your cookies made with almond flour are delicious. Here almond flour is a little expensive, but my daughters sometimes buy it.
    Enjoy your garden!

  9. Years ago I had a vegetable garden and always enjoyed it. There was work involved, of course, but there always is for anything worth while. And the fresh garden produce was more than enough reward. My daughter would never eat tomatoes except those from the garden, and she says that even up till now they were the best. Good memories!

  11. These cookies sound delicious Nicole- and I like the split of regular flour and almond flour. Must try these- so thanks for the recipe.

  12. Really like how you drew that woman's face 🙂

Even though I've never seen the person IRL, if you ask me, it's basically perfect! 👌🏻

  13. Those cookies look very nice. Thanks for the recipe. A cup of butter is rather a lot of butter and I suppose it won't taste so nice if I use oil.
That's a lovely smiley face you drew. Is the challenge finished now?
    Happy T-Day,
    Lisca

  14. Almond cookies...Yum!
How fun that you have a greenhouse! I really want one but they are expensive so that will have to come at a later date. The idea of having food growing year round sounds wonderful, especially for zone 6.
    Happy Tea Day,
    Kate

  17. That's a lovely smiling face for today's face, Nicole. I like it. I also like that you are already planting things in your garden. It's still too cold here. We always have hard freezes until about mid-April. I'm a bit envious that you can plant seeds already.

Your cookies look good and they sound delicious, too. If I ever make them, I'll share them on my blog and show you how much better yours probably look than mine will (grin). I'll take mine with coffee, though. Thanks for sharing your art, your plans for your garden, and your cookies and water with us for T this Tuesday, dear friend.

  20. Your cookies look delicious but I love eating almond nuts but never enjoy almonds in food for some reason.
I’m not much of a gardener but I enjoy eating the few things my husband grows, always tastes better somehow.
    Have a good week

  21. Oh, enjoy the sunny days! Here, sunny, too, but cold. I have no idea what to plant on our little balcony this year. Last year was a crappy summer.
    Great portrait again, beautiful.
Reckon the cookies are sweet, so I´d rather stay with chilli-cheese.
