My Monday Post

Hi Everyone!

Today, which is Sunday, I started the eye drops prescribed to me for my upcoming surgery. I had the choice of getting 4 different meds individually at the pharmacy or having a compound made. Uhhh yeah let's go with the compound. If I had gone the other way I would be putting eye drops in my eye 8 times a day. Yeah that's not going to work for me. With the compound it's 3 times a day. OKayyyy. I don't know what they put in the eye drops but I have not had this much energy since I was.... what am I saying, I have never had this much energy. LOL I can't begin to write all the things I accomplished today. I wanted to get some food made up for Mr. M. and a few things he can put in the micro or oven for the both of us after my surgery.
First I did my gardening and I am so happy to see my potato plants with blossoms. Yay that means potatoes. 


This is what I harvested today.
 and a few herbs. 
Thyme, some Chocolate Mint for my tea, and a bit of Rosemary 
I also picked some dill but didn't make the photo. LOL

Another loaf of Amish bread.

Mr. M. loves his sweets. So I baked a white cake from scratch 
and then made whipped butter cream frosting.

 Ohhh late night egg salad sandwiches for Mr. M. and some of that dill from the garden
and potato salad with rosemary
 I made twice baked potatoes for dinner tonight. Even though I cut the bottom of the potato
I could not get them to stand up for anything. I made my own heavy cream to go in mash part.
I forgot to take a photo but it is so easy to make. I take 2/3 cups of milk, I use 2% and 1/3 cup of butter then put them in the micro to warm the milk and melt the butter. Then I beat it for EVER until it makes cream. I actually put the mixture in my smoothie blender. It turns out very nice and not the cost of what the stores sell it for. Plus you can make exactly how much you need. Oh the above makes 1 cup. I put that into my potatoes with seasoning, fill the skins, top with cheese and cooked bacon and bake until cheese is melted. Sooo good. 
I made oven friend chicken in my electric skillet. No, veggie tonight
the potato is so filling. My plate looks sparse but believe me that was plenty.

Mr. M. has some left over chicken to eat on too.
I also cleaned house, mopped floors, washed clothes and the thing I dislike,
I dusted. LOL
Now it is time to sit back with my chocolate mint tea and hope some of this energy
wares off so I can sleep tonight. LOL

Un momento......oven fried chicken in a skillet. Isn't that an oxymoron? Whatever, it looked good. The potato would have done me in. Wow.
And a potato bloom, I used to love my potato blooms, means they are going to make baby potatoes underground, modesty you know.

Hey D. Yes I think you are right oven fried chicken in a skillet, oxymoron. I just found this great way to cook the chicken without oil and not in the oven. LOL Can't wait to see my potatoes.

What is it about your eyes? Being an artist this must be very, very scary. I wish you all the best.
I was raised as "listen to the doctor", nearly cost me my eye-sight. (all "OK")

I use 'em as well, when I remember I should do it 😏🤷‍♂️ Anyways, hope you're not worried about the surgery or anything because, it's 2020. and people are literally doing it all the time. 🙂 It's very safe.

Btw, the dinner looks FINE. 🔥
