Hi Everyone!
Do you eat breakfast? It's not my favorite meal of the day but I have to eat something in order to take my herbs and vitamins. This AM I had scrambled eggs mixed with hash browns. It's fast and easy.
Dinner is more my meal.
Now you might think this is NOT a kidney friendly dinner, but it is.
I used very lean ground beef, double boiled the potatoes and stove top asparagus.

I did peal them. I boiled them until they were not quite done. Then put them under cold water to rinse off and then soak in cold water while I cooked the asparagus. This helps to reduce the potassium.
Asparagus with my homemade ghee and fresh dill from the garden. Everything came together and it was a great meal that both of us could enjoy.
Everything came under Mr. M's allotted protein, potassium and phosphorus.
Mr. M's been doing so well on his food choices that I broke down on Saturday and made this for him. Totally off the chart for him. But, even the dietitian said you have to have a treat once in a while.
Have you noticed that I have been cooking on a butane stove? I started this about 6 months ago to save on my electric bill. My electric stove is horrible for the bill. Right away I noticed a big difference. Like a $30.00 difference. The stove was inexpensive and the butane is so much cheaper than electric. Plus........ I love cooking with fire. Mr. M. wants me to get another stove and I might just do it.

I'm scared to cook on a gas stove because of the open flame. My Mother instilled that fear in me. She and I have only ever use electric. I bet Mr M enjoyed the HELL out of that pizza!

Since Ukraine-Russia war began in 2022, we haven't been cooking with gas, as its price has risen sharply.

We eat breakfast daily. Through the week, I make scrambled eggs. Your body, especially your brain needs a good supply of protein to function properly. On the weekends, I make hot cereal with all fruit preserves. I love big breakfasts when I have time to do them like pancakes with sausage or biscuits, gravy, eggs, and sausage or french toast with sausage. We prefer sausage to bacon but occasionally, I'll make turkey bacon. Pork bacon is too fatty for us. Breakfast is probably my favorite meal but I don't really spend enough time on this meal right now. Perhaps after DH retires I can do more. I love making nice dinners, though. Pizza is one of my favorite things to make. We have an electric stove and that's what I use. I hope you had a happy and blessed Independence Day, Nicole. Have a boogietastic week! xo
I have a gas stove which I love, much better than electric because it's so responsive. Also we've never had a gas outage, so I've always been able to cook even if electric power was out. Electricity is expensive here.
I like that breakfast idea, because I'm low on bread and it's too hot to bake for breakfast toast. Thanks.

Only option here is electric. When I was a kid we had a gas stove and I remember it was difficult at first to get used to electric when I moved away from home. Your breakfast and dinner look great! :)
Your meals look delicious. We use electric to cook our meals. I usually have porridge with apples and blueberries. If I don't have that, it's usually yogurt with fruit.
