Canning

 Hi Everyone!

During the months that I wasn't blogging, I tried to keep busy with things other than playing nice with doctors that don't give a shit and getting appts for Mr. M.

One of the things was canning. I got a lot done but  not as much as previous years. 

These are just a few of the jars of spaghetti sauce. I ended up with 25 quarts.

I'm always asked what do I do with all the squash I grow. Some of it gets canned. I use this for soups, stews, and cakes. I cut them in large pieces and only can in pint jars or they get a bit mushy. I do not pickle them. Yuck I don't like that.  LOL  I think I have 60 pints.

I canned quite a few pints of carrots too. Again cut them in larger pieces. I have 75 pints of carrots.

Beans are a staple and canning them is so easy. A girl asked me why I can beans, don't they last forever in the bag. I see it like this, redundancy.
If the grid goes down, you don't want to be cooking beans on a camp stove for at least an hour. If they are canned, add seasoning and heat up. These are quarts and I can't even tell you how many different types of beans I have on the shelves.

 Also I made a large batch of refried bean kits in pint jars. You put everything you would normally would for refried beans in the jars, add the beans, some liquid and can. When you need refried beans for taco Tuesday or that special Mexican dinner all you have to do is heat and mash a bit. The best beans ever.
I have about 50 pints of these.
As soon as I can get to Winco grocery store I will be stocking up on cranberries to can jelly, jam, and whole berries.
Oh Winco is a grocery store that keeps their prices very low. However, the closest one is in Eugene, ya know a forever drive. LOL

...I was lazy this summer, I put up an 8 quart basket of cucumbers for dill pickles.

You've been busy Nicole. I can see why you can beans, now t hey're ready to use. You have some quick meals really to go. The only thing I harvested this year that I had enough to can was cucumbers.

I made lots of fig preserves that are canned. But I have never canned anything else.

Wow -- you are a canning machine, Nicole. That's really impressive. I love how the carrots look! This will come in so handy this winter.

Okay, mystery solved about what you do with all those zucchini! I didn't even know you could can zucchini. You must have hundreds of sealers!

You must be prepared for a very long winter. I’m not that future-oriented. Whenever I buy more than a couple of cans of something, we always seem to get sick of it.

You must have an entire room just to store all the jars with shelves to the ceiling! What a wonderful feeling it must be to gaze upon all that hard work well done. :)

Wow, big WOW on all the canning! So much work (once) and you must have a lot of space! This looks all so yummy.
Doctors, well, what can I say - the one who cared a shit about my racing heart is history, I found a new one and hope for the best!

i truly enjoyed at them all
we live in hot area where saving food for later is not part of routine .40 to 50 c in summer which are ten month almost
and around 20 to 30 c in winters so impossible

Hey, dear friend! Lovely to see such a number of jars filled with goods. I had a lot of cucumbers and tomatoes this year, so it's pickled cucumbers and tomato sauce.
