T Stands for baking and canning.

 Hi Everyone!
 
After a 6 month wait to see the ENT about my thyroid I finally saw an actual MD. He assured me at this time I am OK and cancer free. However, he wants to see me in 3 months and another US. He found some other things he wants to address but enough of that. I also had my echocardiogram on a Saturday no less. That report will be in today.
Ohh... and I am looking at foot surgery. Have I told all of you how much I hate 2023? It has literally been one medical disaster after another. No wonder my BP is so high. LOL
With so much stress I have taken to the kitchen. 
I got a great deal on these apples and they are in perfect condition. So I went back for more. Apple butter and Apple sauce coming up. I used to live a drive away from the apple orchards when I lived in N. Id. I miss picking my own apples.

 Deep dish apple pie. Yummm



 It's turning cold here. Haaaa it's always cold here but warming up the  house with baked bread is perfect.



 This is Anadama bread made with molasses and butter.



 The Poblanos are so perfect right now and I can't stop eating them.     


 Poblano, Mexican rice with refried beans, spices, Case Fresco and seasoned mozzarella. 



 Roasted Poblanos and Jalapenos. Onions from my garden, garlic from the garden and what ever else I put in. LOL


 All canned and ready for the shelf. I made 1/2 pints for gifts to my neighbors.

I have hear of bread made with rye or corn, but not of bread made with molasses and butter. It seems good. Love that apple pie 🍎

I am so sorry you're having medical problems (though I am glad you got that good report). I hope your foot surgery goes well.

That food! My mouth is watering! I bet you could charge a pretty penny for the cakes/pies/bread if you offered them at your sale. Yummmm!

I am happy to read you finally got into see a real doctor. we won't see anyone unless they are an md the nurse practioners just do not have enough schooling and we have been given wrong information by them in the past-so no more.
sounds like good news on your thyroid though
I miss not being able to can, this area has had a good apple season too. our foods always look so good too

I definitely hope 2024 is a much better year for you. Don't we all get these crappy years every now and again-I hope no and again for you. And all your apple baking looks amazing. So glad you don't have cancer!! And things are falling into place. I hope you get done with the seemingly endless appointments and waiting for appointments. You need a break!

Did you hear the thump? Was from Germany. A rock that fell off my chest reading "cancer free"!!!
I went through and lost both my parents to this horror. And.. oh, stop, let us celebrate!!!
Yupp. Mid-November my feet are looked at. Constant "pain" and I have no idea what it is, hopefully but the nerves...

Apple butter??? Share?
Pie is looking good, but my sweet tooth just hid!!! It ran away.
Oh, did you use cinnamon? And paired it with vanilla ice-cream?
I treat my Bro once took me to. Yummy (but... tooth, hey, stop running away!)

Hmmm, bread. Ingo bought some that looked so good. Was so dry.
Are Poblanos green peppers? The other ingredients I even do have right here!

Great news on the health front. I will eat apple pie if I have to, apple butter a little more willingly, but most of all I prefer my apple just the way it comes from the tree, crunchy and delicious.

I am happy to hear the good news from the MD. All the baking looks good. I love poblanos too. Jalapeños have been cheap in my local store so I am eating my share of them. I love them pan fried with other vegetables.

So glad you got a good report and that he also found a few other things to resolve as well. Foot surgery does not sound fun, however. I am with you on the boo to 2023 as far as health. It has been my worse health year ever and hoping that it is not something continued next year. I finally got my blood pressure back down again hoping you do too.

All that food looks awesome and super yummy. Wish I was your neighbor!

What incredibly wonderful news about your thyroid diagnosis. It's sad you had to wait so long to learn the results, though. Sorry to read you need foot surgery, but I hope that goes well.

You have been a baking genius. What amazing things you have made with those apples. I'm definitely hungry, now. And I love the peppers. I use them to make chili rellenos, but your Mexican rice sounds good, too. You have some lucky neighbors to receive a jar of your salsa. And you topped it off with a cup of water just in case the salsa was a bit hot (grin). I am sorry about hour health concerns in 2023. Next year is going to be better for all of us. Sometimes I believe the medical profession is finding things wrong with me because my insurance is so good.

Everything looks so delicious, I love baking with apples. I have a ton of them in my garden that I need to pick before they all get blown off the trees... but the weather is so horrible. I'm with you, 2023 has been awful for health things. glad the MD is happy with your thyroid but sorry to hear about your foot. Happy T Day! Elle xx

Whatever you think of 2023, being cancer-free is definitely good news! ❤️ As for the rest: Doctors always want to check and check and check, I'm sometimes not sure if they're cautious or greedy. I usually let my gut decide whether I want further medical checks or not. You have conjured up wonderful dishes from the apples. It's also apple harvesting and apple processing time here - I'd like to send you some ;-) Your poblanos look pretty spicy 🔥...

I'm glad that you are thyroid cancer free, Nicole! As for the other thyroid issues, one step at a time. I hope the echocardiogram results are good! Foot surgery ~ ugh! You certainly have been slammed, my friend! I'm back to practicing walking in a pool. I have a little song I sing when my feet and other parts hurt: "Roll, roll, roll your foot. Straight across the floor. Slowly, slowly, slowly, slowly. Pain will be no more!" Feel free to use it! Your baked apple goods look scrumptious!! And so does your bread! Enjoy! Hugs to you!
