Greetings!
Today is Food Wednesday with Kathy over at Hummingbird Studio at the Lake.
We start with Chick peas and Aquafaba. |
Use the Aquafaba to make cookies. |
Click on the photo to see how flaky these are |
Making the Tahini. Brown 1/2 cup of sesame seeds in a hot pan. |
Pour out on a cookie sheet to cool thoroughly. |
Pour into blender and pulse until a bit crumbly. |
Add 2T of grapeseed or olive oil and blend. |
Add 1 more T of oil and 1T water. |
You may have to add a bit more water. Make sure it is cold water, to get to this consistency. Where it will drip off the spoon. I don't season my Tahini but add any that you might like. |
Now to make the Hummus. In a blender add 1 can of Chick Peas, 1/4C of Tahini, 1t each of garlic and onion powder. 1T lemon juice. |
Blend until the Chick Peas are smooth. Add more seasoning if you like. |
I like a bit of Dill on top. |
The perfect snack or dip at a gathering. We top all sorts of veggies with hummus including baked potatoes. |
I made Lasagna last week. I don't care how hard I try there is always enough to feed the block. Some goes to our elderly neighbors and the rest goes into the freezer. This has meat but I do make a veggie version of it. |
A note on the hummus. I like mine plain with the seasoning I shared. There are so many things to add to hummus, use your imagination and have fun with it.
Also you can freeze Aquafaba and use it later.

First I am hearing of aquafaba. Everything looks so good Nicole! I just linked my potato wedges to Kathy's Food Wednesday!
Good morning, I was not familiar with this substitute for eggs-thank you so much for this tutorial, I love humus and tahini and I had never thought to make my own tahini.
Your cookies look delicious as does your lasagna. I like that lasagna freezes well, and perfect for sharing too.
Thank you so much Nicole for sharing these recipes and information. Thank you for linking up for Food Wednesdays
Kathy
I had to google aquafaba - hm. That is yummy?
Hummus I´ll give a go, thank you! And, ohhhhh time for lasagna! (Sadly just for me)
It's a very long time since I made my own hummus, but it is a staple in our fridge. Can you imagine that there are people for whom burgers and fries are standard food?
...my family enjoys it, but I've never gotten into it.
I make hummus but I always forget about making aquafaba with the juice. That was smart and your cookies look yummy. And there are some things you just can't make small. Lasagna is one of them. Even if you want to. Happy Wednesday Nicole. hugs-Erika
Hi Sis! Wonderful post! I bought dry chickpeas last month to make all sorts of fun hummus's! I found recipes for carrot hummus, beet hummus, caramelized onion hummus, tomato basil hummus...there's another one I can't remember! I bought tahini though, but after I finish the jar, I'll make my own, thanks for the tutorial! The lasagna looks delicious! ♥
Those cookies look delicious. I am glad you shared this recipe. I may try it if I ever decide to make cookies again.
I have made hummus before, but I didn't add water to the seeds. I love tahini and think that is what truly makes the hummus good. Thanks for sharing your recipe for it.
You've been busy!
It all looks and sounds good ~ delish and creative ~ Xo
Wishing you love and laughter in all your day,

Great to hear you also make the vegetable version of lasagna! In Winter we make it with artichokes, mushrooms, asparagus, zucchini flowers, etc.
Your cookies look delicious, Nicole!
Enjoy the rest of this week :-)
Vegan cook/bloggers have had quite a lot to say about aquafaba, even using it to make meringues. Evidently (if I understand the chemistry correctly) it has a protein of the same type that's in egg whites. This contributes the same textures that the egg whites give to recipes. Both of your recipes look very successful.

I have never heard of aquafaba. I would like to make my own hummus, but since I'm the only one who eats it (my husband is allergic to chickpeas) I'm afraid it's too much and will spoil too soon. Maybe I should just try.
Carola I am the only one in my family that eats it too. You can freeze it.
Everything you made looks Yummy ! I don't mind hummus.. but weirdly i like to eat it warm. It reminds me of refried beans so to me it needs to be warm.. I've never made lasagna.. but i do make something close to that called Baked Ziti.. Wonderful post!! Hugs! deb
You can have the chick peas, but that lasagna tempts me :)
