Wednesday

Hi Everyone!
 
My Son sent me some biscotti. Now I like biscotti in just about any flavor. However, this box was different and I am sorry to say not very good. They were made more like short fat bread and the flavors were not as advertised. Nevertheless, nothing goes to waste here. I also had some left over granola that I made last week, so why not put the two together to make sort of a flour. Welllahh!!
 
I put the granola and 3 of the biscotti into the food processor. 
 
It came out perfectly for what I wanted.

Then I made a basic oat meal cookie recipe. I did add less sugar because the biscotti/granola mixture is sweet. 
When the mixture felt right 
I added the b/g mixture to finish off the batter. 
I will say OMG! some of the best cookies I have ever made.

Now for the biscotti. These came from Granny Bella's off of amazon. I give them a rating of "F" they are so hard you can not bite into them. I dunked one into my hot water and there is absolutely no flavor. I did tell my Son so he could give a not so good review. I am just glad that I did find a use for them and that I didn't have to throw them away. 
I hate wasting any kind of food, especially these days.

Biscotti is something I love. It's too bad that was not up to your standards, but it sounds like you turned a bad product into a wonderful cookie. Congrats on saving your biscotti, because I'm like you and hate wasting food.
