Hi Everyone!
Thank you for all the wonderful get well wishes for my eye. My doctor told me that I may not experience the same things as my first surgery. Well he is correct. When he did my right eye a little over a month ago. It was so easy and perfect. This left eye is a bit more difficult. It is healing but slowly and different. I have the lights off and sunglasses on while I write this.
I have been trying to keep busy and
I found the coolest thing in my garden.
At the beginning of the season my friend, Donna, sent me some Lima bean seeds. I planted them and waited. Finally a month or so a go the beans started showing up. I had to do some youtube learning about the beans. Evidently they take a long time to grow. The beans are huge and I wanted to see what's inside. This is the cool part, Lima beans. OK, I know, I may be a bit over excited about my garden,
but is it fascinating how things grow.

I also now have tomatoes turning red.
I think I have mentioned that Mr. M. doesn't like chicken. It's just not his favorite food. So, I am always trying to find new ways to prepare it. OMG!!! I found a recipe that he even likes.
It's a Mexican style casserole.

I know this is not the most appetizing looking photo but it is
out-of-this-world delish. It called for cream of chicken soup. I didn't have any so I made my own. It called for tortilla chips, I didn't have any, so I made my own. Here is the link to the recipe. Let me know if you try it.

I love to eat Lima beans, but It would take a bunch to get enough for me. They are interesting! Good eye news!
Sorry to read your eye is NOT as it should be, but I'm hoping things will improve over time. You have gotten some incredible goodies from your garden. I am truly impressed with your gardening skills.
I'll have to check out the recipe, although I'm not really eating chicken since people are dying because they have to work in those plants and getting the virus.

N, those are “Christmas” Lima’s, not ready yet, they are multicolored when fully ripe. But good that they are making it. I hated Lima’s until I ate those, find some of our friends had same childhood experience with either Lima’s cooked to mush or mealy tasting. I just planted runner beans for my fall garden, taking off like mad. Keep the sunglasses on for a bit longer, patience (I don’t have any either).

Glad to hear the eye is coming along, even if it is slower than the other eye. It will be good when it heals, I hope. And I am with you about gardens. Those little seeds are interesting. I've never tried to grow lima beans, but it would be fun to try. Happy new week.

I'm sorry this eye is slower going than the other but trust it'll be good as new soon. That casserole sounds like something we'd like. I haven't had lima beans in ages!

I am very excited about your little garden too and that casserole does sound delicious!
I love your enthusiasm for the garden Nicole it's like an outdoor gallery to an artist. I do not have a garden big enough to grow vegetables especially with a dog but I would if I could. You just take time to heal Nicole every surgery is different.
