Hi Everyone!
Last week my brother Tom and his wife Linda came for a visit. They live about 2 hours from me and it was pretty much a good bye visit. They have sold their home and moving back to AK. They were only here for a few years to take care of Linda's dad. Now, they will move back home. I will miss them very much.
So, back to my title question.
Do you like lasagna?
We do and that's what I made for dinner for all of us. Not kidney friendly, but as the dietitian said once in awhile it's OK to eat what ever you want.
I start the sauce the day before.
I only used ground beef, leaving the sausages out. For Mr. M. That's a little too much on the bad kidney. Lot's of good seasonings and home canned sauce.
The next day I start with the cheeses. Grating mozzarella and monetary jack for this part. The Ninja works perfect for this.
Since all of these cheeses are bland they get a lot of seasoning.
Mix it all up and then partially cook the noodles. I only partially cook the noodles because I really dislike over cooked noodles.
Now for the fun part.
Layering. I put a little sauce on the bottom of the pan. Then some noodles.
Be generous with the sauce and repeat until all the ingredients are in the pan. Bake until the cheese is bubbling and hot all the way through.
Everyone was hungry so I didn't get a photo of it coming out of the oven. Plus we were having so much fun I forgot.
Seriously this was maybe the best Lasagna I've made. We didn't miss the sausages at all.
Hope you're hungry now. LOL
Nicole

...I LOVE lasagna!!!
ReplyDeleteThat looks so good, Nicole! I do like lasagna but it is SO much work to make and really, you need a crowd of people to eat it. So when I get a craving I just go to a restaurant and order an individual portion there!
ReplyDeleteLooks yummy glad you had a nice visit -Christine cmlk79.blogspot.com
ReplyDeleteWho doesn’t love lasagna? And I’ve never had it with sausage.
ReplyDeleteThis looks like the very best lasagna, obviously made with lots of caring and love! 🥰
ReplyDeleteYes we love lasagna but I have needed to cut out dairy-I was careful with it before, but now no more dairy except for a few things keifer, greek yogurt, goat cheese and milk-no fun getting older haha.
ReplyDeleteI made Lasagna for Christmas Eve. I have to work around sweet bears wonky digestion, so I don't make red sauce Italian very often.
ReplyDeleteI love any Italian food and lasagne is one of our favourites and I often make it. I also tried making a ricotta and spinach lasagne over Christmas when we visited family which went down well 😊. I hope you are well, wishing you happiness, peace and good health this year! Hugs, Jo x
ReplyDeleteLove lasagna, yours looks yummy.
ReplyDeleteThat looks awesome! I have to be careful of my kidneys too...I make my own noodles-it's so easy and no pre-cooking. Yours looks much better than mine-I don't do the cheeses as good as that!
ReplyDeleteIt makes me happy to hear you make your own sauce. It is always, always better and doesn't take ALL that much longer. This looks delicious. Lasagne is a rare treat for me and a favorite. Yum!
ReplyDeleteNicole your lasagna looks delicious! I hate overcooked noodles too. Wonderful and yummy! Wishing you all the best and have a lovely rest of the week!
ReplyDeleteSuch a delicious dish. It's typical of winter. We cook lasagna mainly in February, as that dish is strongly related to Carnival, especially in Naples, South Italy.
ReplyDeleteTake care, Nicole.
love lasagna ~ yours looks so delish ~ and thanks for your well wishes ~ need them ~ hugs,
ReplyDeleteThis lasagna looks amazing. It's a great winter dish isn't it? And nice when you have guests It's too bad your brother is moving so far away. Glad you had a delicious meal and a nice visit. hugs-Erika
ReplyDeleteIt looks great. I have never made one, have eaten a few at other people's homes, I particularly liked one made with mince, sauces and heaps of veggies in between the pasta. My husband doesn't like it at all, so guess that is why I haven't made one.
ReplyDeleteI love lasagne, but grains are very limited for my way of eating (ketogenic) So, if I make it, the noodles are replaced with cabbage leaves or zucchini sliced the long way. I think the zucchini works better. There are also other types of noodles (such as Konjac/shiratki) that are okay for me.
ReplyDeleteYes, now I want lasagne
For many years now we have switched to a vegetarian lasagna and we are happy that we did. It is very tasty indeed and helps us in our quest to eat less meat. We have given up on beef altogether and eat much less animal protein than we ever did. I doubt that at this stage in our lives we will become 100% vegetarian but we are quite far along the path. And it costs a whole lot less to eat without meat, too!
ReplyDeleteWhat kind of a question is that, Nicole?! No. I don´t like Lasagna - I LOVE it!
ReplyDeleteGrating cheese with the Ninja? Must try that next time - reckon the cheese must be very cold for that?
Glad I just had truffle-pizza :-)
Sad your Brother moves away, though.
Bom dia minha querida amiga Nicole. A lasanha parece deliciosa. Espero que o seu irmão faça uma boa viagem para o Alasca. Grande abraço do seu amigo brasileiro.

ReplyDeleteI love lasagne too! Yours looks delicious. I'm going to remember your adding seasonings to the cheese. I've been adding mine to the sauce.I'm sad to learn that your brother is moving so far away. Hopefully you can stay in touch via FaceTime or a similar method. ❤️
