Hi Everyone!
I have had some request for the recipes of the food I showed yesterday. I normally do share those but didn't have time. First the Stir fry and Sweet n sour are on these videos.
This one is for the Stir Fry.
For the life of me I can't find the sweet n sour sauce video or recipe. eeerrrgggg.
If you have been with me awhile you know that most of my recipes are throw in the ingredients and go for it. For the sweet bread I probably made some changes but here is the original recipe.
1/3 C melted coconut oil. I use organic.
1/2 C honey, 6 T of aquafaba or 2 eggs,
1 cup mixed butter nut sqaush and sweet potato. I steam these the day before and place in the fidge. I find it works better cold. 1C milk of choice or water, seasoning to your taste. I use cinnamon, all spice, cardamon, ginger and nutmeg. Again to your taste.
1t backing soda, 1 t vanilla, 1/2t salt
and 1 3/4C whole wheat flour. Optional to add nuts, raisins or dried fruit. Preheat oven to 325F or 163C prepare a loaf pan.
In large bowl beat honey and melted oil with a whisk. Add aquafaba/eggs and whisk until blended. If you coconut oil solidifies just put in the micor for a few seconds. Add the squash mixture, milk, seasonings, baking soda, salt and vanilla. Blend well. Add the flour and mix in with a spoon just until combined. If you are adding any additional mix-ins gently fold them in. Pour mixture into greased loaf pan and bake for 55 to 60 mins. I have a weird oven so I had to put my temp up a bit and it only took about 40 minutes to cook. So adjust to your oven.
I did double my batch also.
