Saturday night Sunday post

 Hi Everyone!

Not too much going on around here. It has been raining with wind so staying inside is good with me. We did go to Eugene last Thursday for an eye appt for Mr. M. 
Then off to the best grocery store in Oregon. I know they are located in WA. state too. It's called Winco
While all other grocery stores have quadrupled their prices, Winco has managed to keep things steady and even lowered prices on some items. Their, "winco" brands are excellent and always a deal. I got canned goods for  .50 cents a can. That is unheard of in my town. Where canned veggies run about $1.89 a can.
 I got a good months of food for $175.00. It is worth the drive.
Mr. M. loves Poblano casserole so I made one last week. Now, with his one kidney not doing great everything I make is kidney friendly. Using ingredients at are good for him. Ground turkey, low fat, low sodium cheeses. Rice is excellent for CKD. 
We had veggie plates a few times this week and then I wanted to make Manicotti. At Winco I got all of the cheeses that I needed. When we started a kidney friendly diet I thought the low fat, low sodium foods would be terrible. 
Actually, they are quite good. 
I made the sauce first. Since I can my own tomato sauce I know it's kidney friendly.
I don't make a rich sauce for Manicotti. The cheese is rich enough. A  bit of ground turkey and onions and seasonings. The sauce was a little bitter. Sprinkle some baking soda on to remedy this. 
It makes the sauce bubbly for a minute.
but removes the bitterness.
I make the cheese filling and both sauce and cheese go into the firdge until the next day when I put everything together.
With the cheese cold, filling the Manicotti shells is very easy. Top with cheese and bake until bubbly hot.
Just out of the oven. 
I don't know if this photo looks apitizing or not but I can tell you this was my best ever Manicotti.
No desert today.
If we want something later it's fresh fruit.

I've never made manicotti but I always order it in Italian restaurants. Yours looks very good indeed!

...I just learned about Poblano peppers. Last Thursday I had lunch with some old guys and I had poblano chicken soap, it was great with a bit of a kick!

Sounds like that store would be definitely worth the drive!
