Tuesday Soup

 Hi Everyone!

With all of the squash I have from the garden I decided to make 
cream of squash soup. 
Of course I didn't follow any directions. I cook by instinct. LOL 
This makes the prettiest bowl of soup. 
You will need fresh squash. I had on large zucchini and the rest are yellow hook neck.


Cut them up and simmer them until completely cook. Then add them to a blender with a bit of the cooking water. 
Now here is why I don't have photos of this. Mr. M. bought me a blender/food processor a few years ago. I hardly ever use it because it is louder than a jet engine. Seriously it hurts my ears. The second thing is that is assembles backwards to every other blender I have ever owned.  I forget about this. I got it all together poured in the squash and BAMB!!!! It all started leaking out the bottom. AYFKM? A huge mess to clean up.
Mr. M. came in from his daily walk and fixed it for me. We laughed at what a bonehead I am. 
Soooooo...
After you puree the squash let it set while you put the pot back on the fire and add a a 1T of ghee or butter. Add the same amount for flour and make a rue.
Once it's all blended pour in the squash and turn down the heat.
Add 1T of chicken broth, powder or cube.
1/2t of seasoned pepper and 1/2t of seasoned salt. Or add to taste. Mix it all up
Then add some heavy cream. I didn't have any so I just added milk. You can also try  1/2 n 1/2 but that seems too sweet to me. Or even try sour cream. Just 1/2 cup.
That's it. So easy to make. Of course use spices that you like.
It makes the prettiest bowl of soup.

We are having chicken sandwiches with soup. A good crusty Italian or French bread would be excellent too.
