Well, I have way over done it today. At 6AM I started the beans. I did the quarts hot pack and pints cold pack. I got 7 of each. My caner only holds 7 quart jars and the pints are straight jars so 7 fit perfectly. Different times for quarts and pints.
Then I decided to make some kidney friendly enchiladas. First the sauce.
I hydrated some black and red chilies.
Removed the seeds and chopped them up.
Then put them in a blender I love this part. It smells so good.

I do the same with onions from my garden.
Into a pot and on the fire. I add a bit of water with some chicken and Mexican seasonings. Let it simmer. Home canned chicken breast is next. Add a bit of chili sauce and shred up all of the chicken. I do add more Mexican seasonings.

Grate some cheese, get some olives cut and cook the tortillas. Put it all together and you have this for dinner.
This is my original recipe. You can add a bit of vanilla, coconut or what ever you want.
You will need;
1C of butter melted, 2C graham cracker finely crushed. 2C powdered sugar, 1C peanut butter +4T peanut butter set aside.
1 1/2C milk chocolate chips.
Combine
first 4 ingredients. Spread in a 9x13" pan and set aside. In the
microwave or on the stove, melt 4T of peanut butter and the chocolate
chips until smooth. Spread on top of peanut butter in pan. Refrigerate
for at least an hour more is better. This sets the chocolate to the peanut butter. Now
let it rest about 30 minutes before you cut into it. If you do it sooner
the cold chocolate will crack. Now enjoy the goodness.
