Hi Everyone!
I've been MIA in blogging the last 5 days. Too much going on and I'm exhausted. However, I had so many cucumbers from the garden I had to do something with them. Why not relish?
I put the cucs, an even amount of onions from the garden and 1/2 the amount of red, yellow and orange bell peppers into the food processor.
Then add pickling salt and mix well. Add enough water to cover the veggies and place in the fridge for 24 hours. Then this will be rinsed to remove all the salt.
Now to get rid of as much water as possible. I have nut milk bags, to remove liquid. I've had these a few years and they are so much better than cheese cloth. They are reusable and clean up easily.
Add the veggie mix to the bag and squeeze.
After making your brine add the veggies, bring to a boil and simmer for 10 to 15 minutes. I filled pint jars and processed them for 10 minutes I got 9 pints.
I have to tell you the sweet relish brine really turned out perfectly.
I also made applesauce this week.
Hope everyone is doing well.
Nicole

Well, all your relish needs are met now!
oh my goodness! The relish looks so good. One of my favourite toppings for everything! I have never tried to make it my self but might just give it a try. Hope you are doing well. THank you so much for visiting my blog. I appreciate it.
I've made a lot of stuff but not relish. Maybe I should try it. Thank you.

...I made dill dills this year!
Your garden-fresh relish must taste like summer in a jar
The lengths that people go to in preserving astounds me.
thanks
You have been very busy! All will be worth it this winter. :)
...nut milk bags?! LOL. To a German .... this sounds.... nuts. ;-)
...cheese cloth?! You have me laughing here!
I would not even know where to find something like this here (and with these words they´d throw me out... ;-)...)
Hmmm. Looks very yummy!!!!
I would relish your relish! I have never known anyone who made it and as I think about all the people who did a whole variety of canning, including us, that seems strange.
I am curious about the nut milk bags. Are they cotton or perhaps nylon? I grate zucchini and have to squeeze the liquid from it for a couple of recipes. These look like they would make that easier.
I love making pickles and relish. Sadly, I haven't had any cucumbers this year. :( You relish looks amazing. Have fun. hugs-Erika
Beautiful cucumbers from your garden, Nicole.
I should try it. Thanks for sharing.
