Hi Everyone!
I want to share a cookie recipe I made up using aquafabe. These are lemon sugar cookies and they are OMG good!
You will need
your oven preheated to 160°F or 72°C I think that is correct.
NOTE; you can add lemon zest to the dough too.
1 C of butter or margarine
1C granulate sugar
6T of aquafaba
1t lemon extract.
1t baking soda
2 1/4 to 2 1/2 C of APF (all purpose flour)
Mix butter and sugar together until creamy.
Add aquafaba and mix thoroughly.
Add lemon extract and mix in.
Sprinkle baking soda over the mixture and then add flour 1 cup at a time until the dough can be pressed down on the baking tray without stinking to your fingers..
Pressing the dough, gently down, will allow them to cook more evenly.
Fill a cookie sheet with your dough. After pressing them add a sprinkle of sugar. Bake for about 10 minutes.
Very yummy and no eggs used.

Anything with lemon wins my seal of approvals. My wife makes a fabulous lemon meringue pie.

I love anything with lemon! But I really don’t bake much any more, only my husband is the house baker for now. He has concentrated on yeast dough.
