OK.....I like crackers and right now rice crackers are what I snack on. I got a case at Costco for a great deal. There are two different flavors, one is 4 cheese and the others are toasted sesame.
They are OK but they are very hard. They have some sort of wash on them that makes them even difficult to bite into. So I decided to make my own. I looked at several recipes and put a few together that I thought would work. Can I say OMG good? :)
You will need white rice, olive or grapeseed oil, salt and other seasonings.
Now here are some tips. This is a VERY sticky dough, keep your hands and spoon wet with water. Make sure the dough is flattened evenly before backing. Bake at 350°F or 160°C. You want the edges to start to brown. All kinds of white rice works very well, brown rice does not.
First make a pot of rice or use left over rice. 2 cups |
Place into blender or food processor. Add oil, salt and any other seasoning you desire. |
If it is too dry as just a bit of water a teaspoon at a time. You don't want the rice too wet. So blend blend blend. |
Prepare a cookie sheet with parchment paper. |
Wet a spoon and your hands and drop dough onto parchment. Then place another piece of parchment over the rice dough. |
With a flat bottom glass or even a rolling pin flatten out the rice dough. You want them evenly flat and thin. Remove the top parchment and sprinkle any kind of cheese on top. I used Parmesan. Bake for about 10 minutes. Or until the edges start to brown. |

I too am a big fan of rice crackers. The brand I buy comes from Thailand and does come in a few flavours, but I generally buy the plain. I usually eat cheese with them and I don't want other flavours interfering with the cheese!

I've never made crackers before. Not sure they are high on my to try list. But, it do think they are a fun idea. Yours do look good too. Happy Wednesday!
I've never heard of rice crackers. Now that I think about it, I can't remember the last time I had crackers of any kind. Christmas, maybe?
I like commercial rice crackers every once in awhile, but they are always too salty. Hey, you've gone back to the old comment box!

I've never made crackers nd I'm not sure I will since I'm not big on crackers anyway. However, your rice crackers came out nicely and look delicious, much better than I have seen in the stores. I like that you always try things like that and share them with us.
Sounds very interesting Nicole. I used to like rice al dente. But not anymore. Now i like it mushy. I have a rice and split peas stored in the fridge. I have had lunch already. Tomorrow, inspired by your dish. I will rolled some into balls toss them in crumbs and bake them

Nice to see the way you made those crackers. I love crackers, but I usually buy Ritz round or flavored crackers. I might try this recipe some day, so thanks for this.
