Food Wednesday

 Hi Everyone!

Today is Food Wednesday over at Kathy's Hummingbird Studio at the Lake

One night last week I had a burger salad. Mr. M. grills the best burgers.  I cut mine up and put it in a salad. Ya, know whatever I would put on my burger just goes into a bowl with no bread. It is sooo good.

Also another dinner last week was stuffed Portabello mushrooms.

Start by removing the stem and  gills of the mushroom. Chop up those stems, gills, onion, celery, and saute. Set it aside. Cook up any kind of ground meat. I used Sweet Italian Sausage. While that is cooking make some stove top dressing. Mix it all together. Fill the mushrooms, place in a baking dish with a bit of water and bake for about 20 minutes or until mushrooms are tender at 375°F or 190°C. Pair it with a salad and some garlic bread and you have a filling meal.

Now, I try not to get off subject or too politcal on my blog, I save that for FB. However, I just heart President Zelensky speak to the US congress. It was a powerful and emotional plea for help. He is an impressive man who wants what we all want. Peace.

  2. That is how we eat our salads too-cut up the meat and put it in the salad. we only eat bread for a treat sometimes-this week reubin sandwiches.

  3. I like stuffed portabello mushrooms but haven't had any in ages. I need to amend my grocery list.

It was an impressive appeal. His country will be in ruins even if Putin stops now. Such a tragedy. Did you hear what Hillary Clinton said in response to being included in the list of folks (all Democrats who've had the attention of the right wing)? "I want to thank the Russian Academy for this Lifetime Achievement Award." lol Gotta love her.

  6. I LOVE your salad! I do the same thing with fish, toss it in and make a fish burger SANS the bun! ☺☺

  7. Those stuffed portabello mushrooms look delicious - it seems to be pretty easy and straight forward, I think I'll try that.
President Zelenskyy made an impressive appeal to Congress - will it have impressed them as well? The short video was heartbreaking. No words.

  8. I was heartbroken by the video that Zelenskyi showed this morning. The horrors of war never change, only the instruments for killing. His appeal was poignant.

  11. Yes, Zelensky spoke to our Canadian Parliament yesterday. He is making the rounds. Everyone wants to help, except for the red line that NATO will not cross of a No Fly Zone.

  13. I love portabella mushrooms, but I usually grill mine on my outdoor grill. I've never stuffed mine. I see everything you cook has meat, so it's hard for me to recreate your recipes. However, I enjoy reading about how you make them.

I watched Zelenskyy's speech live to Congress today. The last four minutes with the comparison of how beautiful Ukraine was before Putin started his scorched earth campaign are heart breaking. Thanks for sharing this.

  14. Beautiful mushrooms and great recipe! Not to mention of garlic bread. Your salad also seems good, Nicole.

On the East Europe front, Mr. Zelensky didn't understand that US & NATO wouldn't cross the red line. He didn't understand that They (US, UK, EU, etc.) don't want to be dragged into conflicts that are of little national interest and will end up costing them a lot in blood.

    All the best!

  16. I like using hamburger or other meats to toss in on top of my salad, too. Mmm, I haven't done this in awhile. I'm gonna have to correct this fast. :)

  17. Hmmmm, both dishes look deli!
At Grill´d (Australia sadly only) you can order the burger in salad, have not tried it yet, but one of my friends always eats it that way, too, and loves it. I told myself "next time" and then... COVID.
Filled portobellos we haven´t had in ages - good idea! I think in our old apartment - we moved here 2011!
Sadly the video is not available here - I hope to see the speech in the news!

  21. I have never liked the taste of mushrooms and DH is sensitive to them, so we don't eat mushrooms of any kind. I appreciated the foodie share, though. I love reading what others enjoy fixing. :) Have a good weekend, dearie!
