I am joining in with Kathyinozarks for Food Wednesday. Have you ever had Mexican Chicken?
It's so easy to make and in fact can be made several different ways. This dish was made in my instant pot on the slow cooker selection.
You can also take any cut of chicken and do this in the oven or even on the stovetop.
Season the chicken with garlic powder, onion powder, Mexican seasoning that you like. Add a can of Rotel and cook. This night we had it over egg noodles with home canned string beans. However, it is just as good over rice or polenta.
It's that easy.
Now for day 9 of 29 faces. I made this clay face a few weeks ago and now it is painted.

Hmmm, yum! I love Mexican food! And wee, he looks a bit grumpy there, just like a thorny guy should!
I like Mexican traditional dishes! We sometimes have chicken with garlic powder and onion powder. There's a Mexican restaurant's owner who delivers enchiladas, tacos, corn tortilla, and other Mexican food at home.
