Hi Everyone!
Today is TAD with Rain. She has made this month's themes a bit difficult for me. I am NOT a Christmas person at all. I don't celebrate and I don't shop in Dec. I haven't for 45 years. So I will do my best this month. For this week Rain has chosen finger bread. I began with looking up ginger bread houses. All I can say is WOW! Some of these constructions are elegant and a delight to the eyes.
I found all of these on google.
Cake recipe
4oz fresh ginger, grated or chopped.
1 C molasses any kind
1 C sugar
1 C vegetable oil
2 1/2 cups of flour
1 t cinnamon, 1/2 t cloves 1/2 t pepper all ground
1 C water
2 t baking soda
2 eggs at room temperature.
peal
and grate the ginger. Mix together the molasses, sugar and oil, In
another bowl, sift together flour, cinnamon, cloves and pepper.
Bring
the water to a boil in a saucepan, stir in the baking soda and then mix
hot water into the molasses mixture. Stir in ginger.
Gradually
whisk the dry ingredients into the batter. Add the eggs and continue
mixing until everything is thoroughly combined. Pour the batter in to a
prepared cake pan and bake for about 1 hour at 350°F
I used a spring form pan with parchment on the bottom.
Place the cake on the center rack of your oven.
In my oven the cake took only about 45 minutes so keep an eye on it.
Hope you try this one.
Be sure to stop by Rain's and join in on the weekly fun.

Have a good week, hugs , Elke
im not a xmas person either, love ginger bread tho :D
Sorry I couldn't play this week, but I sure like all those amazing gingerbread houses. I bought a kit of all those cascading stars and made a tree out of them one year. My tree didn't compare to the one you showed, but I made mine using sugar cookie dough, which isn't as stiff as gingerbread. Nicely done this week, Nicole.
I wonder how it was that Christmas and gingerbread went together. Years ago I knew a German woman who made the most amazing creations. It was a shame to eat them - but we did!
Who on earth has the time to create such elaborate Gingerbread Houses ... don't get me wrong, I think they are wonderful and elegant and all of those expressive words that mean awesome, but a gingerbread house? It must have taken them forever ... what patience. Your recipe looks delicious and I may pass it on to my friends who bake. I gave up baking because I ate most of what I baked and it didn't look good on me :( A wonderful Christmassy post for a non Christmas person ... Enjoy the holidays in whatever way you prefer, Nicole ...

Fantastic Christmas constructions and great cake recipe, Nicole.
I have never been enthusiastic enough of this period of the year, but I don't know why.
Weather is rainy here, but that's Autumn.
Have a nice weekend!
I too don´t celebrate christmas. Too much work to figure out what presents to fix or whatever. And the food I want for christmas don´t exist anymore. I make my own ham and it is hard to get even that. I cant buy salted as I salt them my way, or rather my grandmothers way. So, when my grandkids was almsot grownups I said goodbye to x-mas in my home. You never get rid of it online or outdoors.
Take care!
Those houses are like really cool!
I remember we built one when we were kids. It got stored away for the next season and we never had a nibble.
I can´t remember if our parents told us off or if we refused to "destroy" it!
Must ask my Bro - who, unlike me, loves sweets.
Gingerbread are always a good idea.
Happy Sunday Nicole

I've seen a couple of gingerbread contests where the constructions were massive -- I think you could walk into them. Or they filled a huge hotel lobby. People totally go over the top with this! I think it's great to make a little kit house with kids and let them put all the candy on the sides and roof.

Nicole,
I've always wanted to make a gingerbread house but never have. I do enjoy baking gingerbread cookies, though. I also like making an old fashion stack cake using apple butter. Mmm, is it ever good! Thanks for stopping by for a visit, darlin'!
